Research, research, research – this cannot be stressed enough. Read as much as you can about the industry. Here are some book titles that are relevant:

* Restaurants That Work: Case Studies of the Best in the Industry by Martin E. Dorf
* Upstart Guide Owning & Managing a Restaurant by Roy S. Alonzo
* The Restaurant Managers Handbook: How to Set Up, Operate, and Manage a Financially Successful Food Service Operation by Douglas Robert Brown

Offer a service that your competitors do not. Can your customers e-mail or fax over orders for the next day, so they just have to run in a pick it up? Become a part of your community. Get out and talk to your neighbors and join local associations. Word of mouth is great for a business like yours. Also, be strict, but good to your employees because they are your sales people. They will pass along the great work environment to your customers. Always, have top quality food and amazing service!

Besides other advice you will receive, I'll give you these:

1) In the first stages, always be there to attend it.
2) Install surveillance systems for your employees and make sure they know it.
3) Quality (in every sense) is something customers will always go for, be sure they get it.
4) Promotions always work, don't forget to change them every now and then.

make sure that you have good quality food, that your food is served hot, in a quick and orderly fashion, and that your place is clean. That will be a good start. Oh and if it is on the menu, have it in stock.
