I've left you a message (within comments) at mutual friends' recent ghostly question/answer. . . seems we run in different circles, and interest groups - but - now that we appear to have a 'shared' interest, perhaps our paths may cross more often?
Regarding ethnicity -
Obtaining this information was quite a challenge for me, in my younger life - as I was adopted at age 5.
I searched for both parents, and found my birth mom and her mother - before they both passed on. Neither was born in this country - so it was an unusually difficult thing to locate them.
Seems my grandmother was Czech - grandfather was Irish/Brit.
My mother married a Scot (immigrant), and here I am. . . first generation in the US.

I am English 25%, German 25%, and Italian 50% ...wow that is interesting...let's see and you being Icelandic, Danish, Irish, English and Welsh with a *tiny* pinch of Cherokee... my interest is peaked now... I'll be back...da da da da da da da da
ok ~ on a purely scientific and hypothetical... i found 2 celebrites who together have exactly this mix of ethnic backgrounds and I went to the site where you can put the two celebrity names in and find out what their child would look like... see source for he results...

English, German, Scottish, a tad of Swedish, and that Cherokee of yours must have pinched someone along the lines here somewhere, too. There might be a little French in there somewhere way far back, since the girls in my family all have first or middle French names.

My dad was half Italian and half Croation. My mother is Half German and about 98% Irish and 2% Dutch.

German and English on my father's side and since my mom was adopted and she never knew her birth parents,I have no idea.She had auburn hair and a temper so maybe she was Irish.
