There was a documentary on Animal Planet a while back called "the Future is Wild..." pretty awesome, they came up with a bunch of potential evolutionary patterns etc... and made up new animals. After humans and all other mammals died off they had squid come out on land, and there were computer generated "squibbons" swiging through trees that were apparently highly intelligent. It rocked.

I think if all humans died dogs would take over and dominate the planet. There are over 30 million dogs in the US alone, more than nearly any other large mammal, and they are very intelligent having been in contact with humans and learned so much from us.
