Ever heard of the ancient astronaut theory. Aliens came to earth thousands of years ago and were worshiped as gods.
Burnt offerings, favorable smell, their way of getting people to feed them. Notice in Exodus and Leviticus they are to do 3 offerings a day that also include a grain offering and a drink offering.
Cleanliness, they were more susceptible to earthly germs and bacteria since they were not from here.
The Israelites were so great because at this time some of the "gods" were fighting each other. Gods were assigned their areas or locations, regions, countries whatever you want to call it, the people in those areas were their followers. One of the older god’s son's thought that it was his birth right to take over the title of "Lord of the gods" from his uncle who had always held it and he was granted it. Then his uncle got the Israelites to be his new followers. And this was why he was such a jealous angry god and hated Baal worshipers.
The people were so bad before the flood because the aliens were mating with the human women and the Lord of the gods did not like this. Because the aliens were polluting their bloodline by mixing with humans. Read Genesis 6 about the sons of god’s takings the daughters of men as wives and having children with them. The flood was a predictable natural disaster, which is why god said his spirit would not abide with man for over 120 years. Some people believe that this means that man could not live over 120 years old but read the bible Noah, his sons and their sons all lived over 200 years after the flood. He was predicting that in 120 years the flood would come and kill mankind so that they could no longer mate with the aliens, and have children of mixed bloodline.

First of all, understand that the OT is, after all, originally a jewish book, written by jewish people, for jewish people who lived in and around the area known as Israel. It was only much later that it was incorporated into the christian Bible. It tells of practically all human conditions, bad or good. Secondly, if you are truly interested, you need to study the history of the entire middle east. Start reading and enjoy the ride through time and the evolution of the history of "God". College courses, much discussion, and patience will cover what all you are asking. Or: just accept what some preacher tells you. Your choice.

Here's the dealio-yo. The Almighty God of the Universe decided to create beings that were made in His image so He could have communion and a relationship with them, aka Humans. God also gave us a free will. When Adam and Eve first sinned (which would have happened sooner or later) we were banished from paradise. As time continued on more humans populated the earth and more and more of them forgot how mighty and powerful God is. To keep His beloved creations from being sent to hell, God tried to create ways of saving them and cleansing humans of their sins, these are the burnt offerings. But, because we are creatures of habit and pleasure, we forgot God's love and grace and pursued earthly desires. This enraged God (much like a father would be with his children when they do something wrong) so he punished us. Sometime there were holy men (Abraham, Moses, Issac, etc) to communicate with God and to get him to cool his temper a bit (a lot of this is in Exodus by the way if I stop making sense, sorry). God was so frustrated by the many failed attempts to save us and bring us closer to Him and He didn't like the burnt offerings as an attonment for our sins so He make the ultimate sacrifice. His son, Jesus Christ. By constraining himself in human form and facing every single temptation that we do, and over coming every single sin, God was able to sacrifice his own perfect blood to make up for our own sins. That is the story of God's love for us in an extremely brief paragraph. I didn't do it justice at all and I'm sorry that I couldn't do that on here. The bottom line is, God was new to the whole creation of human beings and the way we act and he finally figured out a way for us to come and spend and eternity with Him through His son Jesus. So that's why there isn't an angry vengeful God any more like in the old testament. That's why it's called "old" and "new."

You asked a host of questions but they do seem to have a common theme. It is impolite to answer a question with a question but here it is appropriate.
Do you believe GOD the creator is/was capable of creating what HE/SHE waned? If so, would any of the creations be any different from that which GOD wanted? In other words, if GOD wanted to create a perfect man, would it be possible for the creation to not be perfect? Would GOD create an imperfect creature with the hopes that the creature would correct itself and become perfect, or, would it be possible for the created to accomplish that which GOD could not? If GOD created a "chosen people" does that mean HE/SHE created others that were mistakes? If GOD wanted to smell burnt flesh, would we be needed to supply it? Would an entity capable of creating a volcano need our help in building a BBQ pit? If GOD wanted Enoch to be perfect, would it be possible for Enoch to not be?
All your questions stem from a book written by uneducated men trying to hold the people under their control by fear. Now the church is educated enough to understand the fallacies of the bible but don't dare admit it for fear of losing their positions. One proof of this is found in2nd Chronicles, Chapter 22, Verses 9,10& 11. Ask yourselves why you have never heard these passages in your church. I don't believe the passages but then I don't believe the bible. Read 9-11 and see if you do either.

Have you ever read the part when God regreted making man??
I thing God got a lil tired of all the sin in the past, it had never been so it was new to them and him aswell. I can ask my pastor yr questions if ur really serious We can chat and I can find out for u im a lil new in the getting more serious about the bible and i dont wanna give u guesses or wrong info, k.

The Old Testament is a collection of Jewish stories and cautionary tales. Since the Jews were very demanding on their own people, their God was equally demanding of everyone. The Jewish God is NOT a God of love. The Jewish God is a terrible God of horror and terror, a bully much like the Arab Allah. No love there, either. Is it any wonder the two peoples hate each other so much?
