Gigabyte lists a compatability chart (but only lists Intels) for your motherboard here:
http://www.gigabyte.com.tw/Support/Motherboard/CPUSupport_List.aspx?ClassValue=Motherboard&ProductID=1619&ProductName=GA-8PE800

I would get the fastest I could afford and with a decent front side bus. It really has to do with your own budget. Skip the Celeron if you plan on using your computer for anything besides just email and word processing.

Not knowing what you have now, I don't know if this would be a upgrade, the best you can do for a retail package is a Pentium 4 at 2.8GHz, http://www.newegg.com/Product/Product.asp?Item=N82E16819116180

Or a 3.0GHz model that does not include the heatsink or fan, http://www.newegg.com/Product/Product.asp?Item=N82E16819116175

And to why, well, they are the only processors besides certain versions of the Celeron D that will fit your motherboard and those probably aren't a major upgrade.
