I don't know about an enzyme. But the Germans did it something similar in WWII. They converted carbon bearing materials into methanol. Using a copper catalyst and steam ( got to have source for hydrogen) . The temperatures and pressures required are on the order of 600 psi and 600 deg F.

I don't think so, but bacteria in the body can break down food and convert some of it to methane.
