You don't have to pay taxes.
But if you don't, then they might eventually take them away from you (with extra as a "penalty"). So, the real question is: "why do they take money that you have earned from you by force, then justify it with the term 'taxes'."
The answer is that society still runs based on violence, fear of punishment, and force. It need not always be this way, but that is how it currently is.
The money you earn isn't yours: you are a slave.
There are great scenes in a 1999 movie called Instinct, where this guy finds freedom in the African jungle, then helps show another guy that his illusion of freedom is an illusion... great stuff!

Taxes are collected by the state for the development of our infrastructure.. The state uses this money to maintain roads, bridges, govt. offices, govt. hospitals, railways, and so on and so forth.
In India, taxes are paid by the individuals so that his income tax returns can let him avail loans from banks and other private financial institutions.
My Economics teacher says taxes are collected by progressive system so that it does not harm the people with lower incomes

A regressive tax may at first appear to be a fair way of taxing citizens because everyone, regardless of income level, pays the same dollar amount. By taking a closer look, it is easy to see that such a tax causes lower-income people to pay a larger share of their income than wealthier people pay. Who's gonna pay for fixing the pothole in front of your house? Where does the money come from to put the street there in the first place? Who will pay the guy that makes sure the water coming out your tap won't kill you?
Someone has to pay for care of old people who already paid their fair share of taxes. Who pays to make education happen?
Who pay the people that came to put put out the fire that is burning YOUR house down, or the cop that finally finds out who messed up your sister? Who pays the prison guards that keeps him out of your life?
Man, it cost a whole lot of money to run this big, fat, crazy world, and we all gotta pay for it. There are only 2 certainties in life - death and taxes - and they even tax your corpse.
Just get used to it.

Why do we have to pay taxes? To pay for government services (roads, schools, etc.) But big governments waste at least half of what they receive which ruins the economy and makes life hard for many people.

Food isn't taxed in the Uk, but the taxes we pay go toward running the country, i.e. armed forces, government etc
