the ability to make paper so that thoughts, ideas and history could be recorded
the internal combustion engine so that other inventions resulting from it could be designed
electricity and/or telephone: without them we'd still be living with oil lamps and sending letters instead of talking live.
On another note, I can remember a discussion in history class about this very topic many years ago...people have always thought that the invention of the wheel was the biggest boon to mankind. My history professor claimed that this wasn't true: it was the ability to grow hay...when asked why he explained that without the ability to provide food for his livestock during the winter months, man would still be limited to living in warmer climates....definitely something to think about.
