Copyright your work before sharing it with anyone. If they steal it and profit off of it, you can sue for all the profit.

There are a few internet sites that I have used for years without any problems, and I have published the short stories I've had reviewed on there. By far the best is www.critters.org. They are excellent and your work is safe. You'll get 10-50 critiques on each story. The price is you have to critique other's stories - which is excellent practice for your own writing. BTW it's only Sci-fi, fantasy and horror.
The other option is to pay someone to do it, but don't do that unless you are very very sure they're honest and competent. Best of luck.

Is there a local community college nearby? Perhaps you could ask someone in the English Department to critique your writing.

You can sue without any sort of copyright. You have your own notes, drafts, etc.
But aside from that, what do you think they're going to do with it? Its not like they're going to be fantastic writers if they're stealing it. Just chill and then go find a critique partner. Use a YAHOO! group if you dont know where to find one.

Do the poor man's copyright: mail your work to yourself, and leave the envelope sealed. Have multiple copies of your work.
