If you're into the shounen-ai thing, then Gravitation and FAKE are good mangas.
Otherwise, I think GTO: Great Teacher Onizuka is a pretty decent manga, but I'm easily amused, so...
As for graphic novels, "Watchmen" by Alan Moore is interesting, but heady in a political way. Anything Alan Moore is, really, but it's really well written.

Fruits Basket and Tsubasa have already been mentioned, but may I also suggest Hana-Kimi, W Juliet and Ouran High School Host Club. The last three are funny, sweet and slightly complicated Romance.
