Seriously. The water in the cells turn to ice. This can rupture the cell membranes giving it a somewhat tenderizing effect. Ice can sublime. Not the euphoric state, but go from solid to vapor without passing through the liquid form. It is a form of freeze drying. Freeze drying is more efficient when a vacuum is pulled on the object as it is frozen. When moisture is lost from frozen food this way, it is difficult if not impossible to replace the moisture from the same cells that lost it. It can make the meat taste different. It's called freezer burn.

Freezing does not hurt the quality of chicken. There are no significant changes. If you are going to freeze it, do it as soon as you can, make sure it is totally covered an frozen quickly. It keeps about 6 months .
