In Davao City, Philippines, we have a collection of over 400 banana cultivars coming from different parts of the world. But the best for me is our native banana called "Latundan." It's peel turns yellow when ripe but the flesh inside is white. It tastes much better than our top banana export which is the Cavendish.

The ones that only have a slight tinge of green to the skin. The ones all yellow are too sweet and the ones that have started turning brown are disgusting, but really good to use if you want to make banana bread.

I like two rare varieties that I grow here in Florida.
"Ice Cream" = blue skinned and not banana flavored, sweet and vanilla flavored
"Apple" = only an inch and a half long but the bunch has 300 bananas on it and it tastes like granny smith apples,
Visually I like the "dwarf pink" = the fruit is bright pink! but it's not edible and it has lots of seeds in it. it only grows three feet tall.
