I teach 6th through 8th grade students with special needs, and we run a class bakery. Seems like everyone's on a diet, and the staples are getting a bit boring, so I'm looking for new ideas for this year's menu. Any suggestions are appreciated!

If everyone's on a diet, that does seem to put a damper on your Baking Class -- UNLESS you want to get creative and stop baking sugar-filled deserts. You can bake chicken or fish.

Baked Cod sounds wonderful right now.

make a type of slow-rising bread, like a French baguette or cinnamon rolls. they taste good, are more challenging because you need to pay closer attentions to directions and have team work. The ones who do it correctly have a loaf that has risen and tastes good.

If youre trying to be healthy, stick to fruits (tarts/pies), dinners and breads

I think fruits, such as apples and pears, would be a good idea. They taste great and are low in fat!
