According to the Maryland Sea Grant website, oysters have the following body parts:

Adductor muscle
Labial Palps (Okay, commence sniggering.)
Mouth
Esophogus
Stomach
Digestive Gland
Intestine
Rectum (Okay, more sniggering)
Anus (Outright guffawing allowed)

So, no head.
