According to the Maryland Sea Grant website, oysters have the following body parts:
Adductor muscle
Labial Palps (Okay, commence sniggering.)
Mouth
Esophogus
Stomach
Digestive Gland
Intestine
Rectum (Okay, more sniggering)
Anus (Outright guffawing allowed)
So, no head.

no but bearded oysters are located near a head...
