It is the area between the native rock and rocks that have been metamorphosed. These rocks have undergone some change because of the heat, but have not recrystallized.

Think of it this way. A magmatic intrusive pushes its way up through some sedimentary rock. The intense heat affects the surrounding sedimentary rocks. After it cools, you have the following; diabase rock (cooled magma) an area of contact metamorphosed rocks, the "baked zone", then the native sedimentary rock.

PS I am sure if you look in your book, this will all be explained. Is this your homework? I also had to explain anthracite coal to you.
