RAID 0 is always faster. Of course, when one of your drives decides to kick the bucket, you lose everything. The Raptors are fast enough separately to do anything you'll need to. If you're looking to impress your friends, or have what appears to be one large, blazing fast drive, then RAID 0 is the way to go.
