An e-mail is a written document, that is as legally binding as any other document. Many companies that practice e-commerce do not provide paper documents. They provide e-mails that serve as reciepts or contracts. If you have an e-mail from someone that states they will perform a service.. and they didn't do it, it is still breech of contract

It's extremely binding. And is fantastic for evidence. I used a company's email that they sent to me as evidence in small claims court and I won. People and companies are very flippant with their e-mails at times but remember EVERY email can be used against you.
