I have to send a package and on the USPS site they say it is going to cost 1.11 in postage. Its a flat package, so its okay for me to send it with stamps. I have stamps that are 'first class' but they dont say how much they are worth. Should I assume they are 34 cents and stick 4 of them on?

Although the stamps may be blank the Post Office knows exactly what they are worth. Also, depending on when you bought the stamps, they may be worth 34 or 29 cents. If you know for sure that you bought them for 34 cents, you can go ahead and use 4 of them. If you are not sure, I would make a trip to the Post Office.

If your "First Class" stamp has a flag AND the statue of Liberty, it's worth 39 cents in postage. If it has a wavey flag and nothing else, it's worth 37 cents. If it has some other picture, check with the post office - they have a chart that shows the value of this sort of stamp.

There should be a bar code somewhere which will tell the post office how much the value is. You can actually order stamps with any picture on them. Since you'll have to take it to the Post office anyway, or have it picked up by a postal worker, ask them if it is the right postage.
