Why do we call famous people "Stars", they are not untouchable, like the stars in the sky.

I don't think the word "star" is actually suitable for some celebrity. Well, yeah, probably it's because of their inaccessibility and it's pretty hard to count how many celebrities Hollywood has. Plus, most of famous people shine very brightly, their lifes are always under attention of media and the whole world actually. Planet's eyes on them all the time.

For good or bad, most celebrities are out of this world; just like the stars!

I guess they're called stars because people look up to them. I don't but that's the best definition I can come up with.
