A carpenter gave me some very nice wood, and we will use
it for a nice cutting board in the kitchen, but should we season it
with any special oil before using in order to seal the wood.

mineral oil, petroleum products are hazardous and cooking oils can turn rancid.

You should NEVER apply oil to your cutting board. If you happen to get olive oil or cooking oil or whatever on it, wash it off with soapy water fairly soon after and make sure to DRY it. Cutting boards need no sealer whatsoever but if you really have a hard-on for that sort of thing, melt parafin wax or Bee's wax and spread some of that on. Certainly not oil. Oil is NOT good for wood EVER........especially wood that food goes on because leaving it there will promote bacterial growth. Whoever told you to oil a cutting board as a sealer is an idiot.

USP-grade mineral oil - do not use vegetable or olive oil because it can turn rancid - Mineral oil remains safe throughout its life - you can find it mineral oil at your local drug store

Vegetable oil, corn oil or peanut oil will all do it!

Do not use any petroleum products as they will leach into your food!
