It's a joke referring to hotels or any place, really, where a famous person slept, ate, did whatever. When it happens, people like to mark it with a sign, such as "James Dean ate here," or "Jim Morrisson used this bathroom," or something stupid like that.
The sign you are seeing is making fun of that place itself. It's like saying, "Nothing famous happened here, and no one famous was here." It's supposed to be funny. :)

There used to be a serious outbreak of advertising a house, hotel, or even a pig sty by saying that somebody famous had slept there. In the case of George Washington, he must have slept in at least six places each night of his life. So your wooden sign is a bit of irony

It's just a little joke because some places promote themselves as being famous because George Washington slept there (Inns, historic houses, etc.) So the sign you see is sort of sarcastic... George Washington DIDN'T sleep here.

So many places advertise that "George Washington slept here", hoping to bring more business. The business you describe is saying just what they say -- George Washington didn't sleep there. It is probably put there to attract attention -- and apparently it did attract your attention.
