Although max volume is better for a square... it is the pressure exerted in corners that make it more safe. It is also more aerodynamic, easier drained and not as much "swaying" back and forth during transport. it also narrows the point where fuel will collect when it is pumped out so they can pump out every last drop... relatively speaking.
They would also be cheaper to make... less welds to do on an oval than a square. Not necessarily a reason for their use, but it does help keep costs down.

Round is the shape which results in the lowest stresses. So the tank can be made out of thinner material an so be lighter so a higher percentage of the gross weight can be cargo.

Disperses the fuel evenly so making is easier to transport. Would lesson the damage if there were a flip-over - no corners to cause bigger Sparks so less chance of bigger boom. It also looks more attractive.

I personally think they are round because there are less "seams" in the construction which would make it a stronger container that was more "leak proof"

To get the maximum volume from the space available.
Also, it makes sure that there are no corners where the leaks tend to develop first when in use.
