I think it's because of the amount of time they spend sleeping, even if they do wake up every few hours. They need sleep and food to grow, so they sleep, wake up and eat, then sleep again. Growth hormone is released when they sleep, as it is when we sleep but not in the quantities as babies do.

Even though a young baby may wake frequently they can sleep very deeply in between - especially if they are breastfed and the mother avoids dairy and caffeine in her own diet. This saying comes from times when we all had more natural diets and less pollution and chemicals in our lives.

I believe it's talking about babies innocence and having no real cares or worries in the world, to make them toss about and stare up the ceiling for most part of the night. Sometimes i just wish to be like that...who wouldn't..?

Maybe it refers to people in an earlier era when they could give a baby a nip of whisky to get it off to sleep. And so babies might sleep more soundly. But I'm only guessing.

babies after 2-3 months usually sleep all night totally peaceful... At least my kids did

Because people tend to repeat cliches without really giving it much thought. Scary, huh? Good question.
It's sort of like, Have your cake and eat it, too. Well, you really can, you eat one focking slice and put the rest in the fridge. Once it's gone, you buy a new one.
If you don't eat it all, even better. Who wants all those calories anyway?

I've often wondered the same because in my experience, most babies sleep in diapers and wake up wet(or worse).

I think originally the saying was sleep like a babe. A babe can be older than a baby. My son has sleept like a freaking dead person since he turned 1.
