I've used baking soda to good effect for dealing with that.

Another thing you can try is heating the pan, then pouring in a couple of drops of dish detergent and a bunch of water. Most of the black stuff will loosen right up. Let it sit for about 15 minutes, then pour out and use baking soda on what you have left.

Good luck!

My husband loves to cook and his pans are special. I burned food in his special pan so bad that not even trying to scrape with sharp edge would not remove the black. Like a little child I didn't want the hassle of the finger wagging so I hid it on a shelf behind the garage. After the summer came and went, I happened to look at the pan. All was gone....I am assuming the hot sun and weather, or maybe even animals - who knows....But I washed it and exclaimed to my husband, "I found your pan!"

Try sprinkling salt on to it let it set for a few minutes. Then put a couple of cubes of ice.Shake it around so the salt and ice acts as an abrasive scrub. Sometimes this helps.

Try putting baking soda and water then put it to boil. That may soften it up. However, once a pan has been burned in badly, it can be ruined.

If it is stainless steel, sprinkle some baking soda in the bottom, cut a lemon in half and rub the lemon into the soda.
