Just to add another name - Eric Hidein Long-Track Speed Skating an unprecedented five gold medals, 4 olympic records and 1 world record at the 1980 Winter Olympic Games. I am pretty sure this is the most individual gold metals in one olympics.

By wining everything from the sprint distance of 500 Meter to the lengthy 10,000 M he show versitility you don't normally see in racing events. Try to find someone who can win the 100m and 1500 M in track. Even Spitz above did all his swimming at 100 M and 200 M.

Those are good, but I also consider Bob Mathias' two Decathalon victories, Al Oerter's Discus victories and Billy Mills' 10,000 meter win.
