You are NOT allowed to move yourself INTO check or to leave your king in a check.

If you are in check you must get out of check immediately by a defensive movement of any of your pieces (including the king) or offensively by capturing a piece using any of your pieces (including the king) as long as that move doesn't put you into another check situation.

One fine point to remember is that you CANNOT "castle" across any area in direct attack by your opponent.

if you are in check you must get out of check or it is checkmate
3 ways to get out of check...
1, move your king to a safe square
2, block the attack with any of your pieces (can't block a horse of course)
3, capture the checking attack piece, which only doesn't work in the case where 2 enemy pieces check at same time (called double check)

As long as it removes you from check, you can take it. If your king is still in danger when you take the piece, then no,you can't.
