Because they all have a special kind of gland that separates out the salt from the water they take in and this gland excretes it back into the ocean. Ocean water has exactly the same saltiness and salt content and concentration as blood plasma. It is .9% NaCl. Wierd huh?

A fish's body has to control the amount of salt inside to control the amount of water inside the fish. Plants do the same thing. I am just guessing though.

They are generaly washed while preparing the fish so as to eliminate that effect. Also the outside of the fish is the part that is exposed to salt water, not the part you eat.

Fish probably have a really amazing excretory system that is really good at removing salt from the body.

their bodies still hafta maintain the biologically "right" amount/concentration of salt in their system, or their cells would either shrivel up and die or just pop
