A well known celebrity singer just moved into my apt building. I see him/her quite often in the building lounge/gym area. What would you do? (say hi, shake their hands, greet them by their name, etc)

Say hi, be polite, treat them just like you would if they were a total stranger. Say
"Hi! I'm ---. I hope you like the neighborhood. The parking is lousy, though, isn't it? (or "My neighbor is really nice. Have you met anyone here yet?") or some other general comment about the building or other residents.
Don't call them by name. It would sound presumptious. Wait for them to introduce themselves.

The more chances you get to see him/her casually the more you will be able to say as with anyone else. Just treat them like you would anyone else that intrigues you. Just keep in mind that they are at "home".
