David Eddings is amazing. His five book series, "The Belgariad" is wonderful as a stand alone, but he continues that story with another five book series titled, "The Malloreon." Then there are two more books related to that series, where each of two main characters are telling their own stories. But they are really wonderful reading, and very hard to put down once you start. I've read this entire collection several times over many years, and each time I find something new that proves to me that Eddings has an incredible mind.
I am currently reading the book "Eragon" that was recommended by someone else here, and I like it, but its written in a much more dry style, and I'm having no problem keeping it in the bathroom and only reading it when I'm going to be in there for a while. LOL.
That would never have been an option with the Eddings books. Give em a shot, you'll really be glad that you did.

Okay, for fantasy romance (the romance develops in the second book), and the fantasy elements are AMAZING. I can never put any of these books down-- they're so addicting!:
The Rhapsody Saga by Elizabeth Haydon:

Book 3: Destiny
(Then the companion trilogy:)
Book 1: Requiem for the Sun
Book 2: Elegy of a Lost Star
Book 3: The Assassin King (this one comes out January 2007)

Anything by Piers Anthony. His Xanth series is pure fantasy. There is a very special dragon in this series. He's the Gap Dragon. He's big and mean and protects the Gap. That is until he meets Ivy. I don't want to give too much away here. I promise you will love the books.

If you've read the Acorna series I assume you've read the Dragonriders of Pern series, but if not that's a good one, also by McCaffrey. Alta, Joust, and Sanctuary are the begining of a series about dragons by Mercedes Lackey and they're really awesome. Dragonspell by Donita K Paul is alright too and also the first in a series, although I haven't read any of the others. Patricia Wrede writes a humorous series about dragons, The Enchanted Forest Chronicles, including: Dealing with Dragons, Searching for Dragons, Calling on Dragons, and Talking to Dragons. And Eragon and Eldest by Christopher Paolini are good, although nothing especially original. the Enchanted forest chronicles, eragon and eldest are all really easy reads, but still decent books.

Terry Brook's The Heritage of Shannara series is a good place to start. It may be a bit mediocre than D&D books by margaret weis and tracy hickman but it's the next best thing if you want a book that doesn't have heavy political, religious or a kind of "art of war" stuff in it.

King Fortis the Brave about a pair of twins that are pulled into a magical realm and caught up in the battle against a wicked sorceress that is trying to overtake the land. A great book full of action and humor that I found hard to put down!

In the extensive list given by other people there
is one series I didn't see mentioned. This is The
Fionavar Tapestry by Guy Gavriel Kay. It is a
three-volume set, the titles being The Summer
Tree, The Wandering Fire and The Darkest Road.
It's among the best in my opinion.
