First ask the blind man about past experiences. Then think about what the color of the sky feels to you, and using the blind man's past experiences, describe it to him by turning the things you know, into the things that he's felt before.
Color isn't just what we see. It can also be the tone that it represents.
Possible ways: The feel of moisture. The lightness of cotten to describe the clouds. The feel of something dark coming quietly to describe the calm before a storm, etc.
