Yes you can in two ways as follows:- but remember not all the programmes have subtitles.
this is what you do:- from your sky remote press number 4 (system set up), then number 3 (languages and subtitles) then go to subtitle and press your arrow right to turn it on but remember to go down all the way and press select to save the new setting. Now this way you turn the subtitle permanently on but if you only want to turn it on just for the programme you are watching now press help and then arrow right on the subtitle and go down and press select. the latter way will turn off the subtitle as soon as that programme is finished or if there is a commercial break and you need to turn it on again if you so wish the same way. hope this helped.

Not fully sure but I've got Freeview and my boxes remote has a Subtitles button on it to save you from having to use Teletext's Subtitles.
I think Sky also has Subtitles included.
In general I'd say it would but look into it first before you buy anything.

Most DigiBoxes do support subtitles, for example Freeview and NTL/Telewest. There is a separate subtitle button on the remotes and once you locate and press that, you will be OK.
Also, subtitles can be obtained on the on-screen display configuration section of the DigiBox.

On my previous Freeview box I had to go into the setup menu to turn subtitles on - a bit of a pain.
My new box has a subtitles button labelled 'sub' so that I can turn them on & off at will - much easier
