It depends. If you are talking about the back pillows on the sofa or the pillows that just rest on the sofa for looks, then the polyfill will do just fine.
But if you're talking about the pillows that you sit on, then I don't think polyfill would be the best. Walmart sells actual square pieces for chairs, but I'm not sure on how many different sizes they have.
Of course, this all also depends on the type of sofa you have.

There is special fill you can get at a craft store (forget the name right now) and simply unzip the pillow and make sure to pull the fill apart to make it fluffy before you stuff it in the pillow. If there is no zipper, you will have to undo the seam then sew it up.

Go to Wal-Mart and buy the white Poly stuffing for pillows. Then cut a slit open in the edge of your pillow and stuff it as you want and sew it shut.

any craft store would have the bags of stuffing cotton...if it has a zipper, than just stuff and rezip, but if not, then find the seam, and undo it, stuff it, and try your best to sew the seam back to the way it was..
