Why does Israel honor all religions' holy sites?

They don't desecrate them (unlike other societies), as a matter of fact they work to preserve them. The Dome of the Rock is a beautiful building to behold. I've seen it in person (wasn't allowed in) but from the outside its beautiful. I would hope that when people criticize Israel they think about these types of things too.

Because they would be sanctioned by the UN for destroying world heritage?

Because if they destroy the Dome of the Rock they begin WWIII? Because if they rebuilt the temple and are still hated by everyone and their messiah never comes all their beliefs are worthless?

Because they have better things to do, like building a powerful country instead of destroying things that have meaning both to them and other religions?

Because they don't want to be killed? I think it is more likely that it could be a result of their own persecution in Europe, when too many of their temples and schuls were destroyed or desecrated by the Nazis and their followers.
Now, they don't want to do that to anyone else.

um im not sure im getting this question...why do they hate their holy sites? THEY DON'T
