It's called elote. In Texas we can get it at stands, usually outside grocery stores
3 tablespoons mayonnaise
2 teaspoons fresh lime juice
2 tablespoons finely grated parmesan cheese
1/2 teaspoon chili powder
1/4 teaspoon ground red pepper
1/4 teaspoon ground cumin
1/8 teaspoon salt
4 ears corn, shucked
Prepare grill.
Combine mayo and juice (if using) in a small bowl.
Combine cheese and seasonings in another small bowl.
Place corn on grill rack that has been sprayed with cooking spray.
Grill corn 12 minutes or until tender, turning frequently.
Remove from grill and brush with mayo mixture, and sprinkle with cheese mixture.
Serve immediately.
or elote con crema which is served in a cup.
1/4 cup butter
2/3 cup finely chopped white onion
1 garlic clove, finely chopped
5 poblano chiles, charred, peeled, stemmed and seeded
4 cups corn kernels, fresh or frozen
1 teaspoon salt, or to taste
4 ounces chihuahua cheese (about 1 cup), cut into small cubes*
Mexican crema*
Preheat the oven to 350 degrees. Melt the butter in an ovenproof skillet and cook the onion and garlic over low heat until translucent.
Cut the chiles into narrow strips, add them to the pan and cook them, covered, about 5 minutes. Add the corn and salt to the chile mixture. Cover tightly with a lid and put in the oven to bake for 20 minutes. Add the cheese about 2 minutes before the baking time ends so it will melt. Stir in the crema to desired consistency and serve immediately, scooping into warm tortillas, for a light lunch or a great starter course.
*These items can be found in the refrigerated Mexican food section of your grocery store. If unavailable, substitute Monterey Jack cheese for the chihuahua cheese, and sour cream thinned with a little milk to a sauce-like consistency for the crema.

I don't think it was on the same level as Napoleon Dynamite, nor was it supposed to be. ND was directed and written by the same guys, but was produced by MTV and was meant for older people to think it was funny. Did you notice that Nacho Libre was produced by Nickelodeon? I think even though it's not advertised as such, it's meant to be funny to a younger audience. Were all the previews in your theater for kids' movies? Mine were. They are two different movies for two different audiences. And to a kid...farting, poop jokes, getting beat up...that's pretty funny!!! I'm pretty childish so I thought it was funny. :)

A corn dog? Sorry haven't seen the movie yet. My guess is it's a corn dog and u can buy them at the grocery store.

It is roasted corn. You take an ear of corn and put it on the grill, husk and all. Roast it for about 30 min. turning it regularly. The topping is a mixture of lemon juice and mayonnaise. Sounds gross I know, but my wife says its good. I can't bring myself to try it though.

I think it was just corn on the cob topped with mayonnaise and paprika (red stuff).
Be careful with it, you don't want anybody to lose an eye.

Its just roased corn on a stick. You can add lemon/lime juice, chili pepper and mayo....its really good!
