He and Guineviere were killed off. There is no "official" story, because the legend of Arthur has existed since the 4th century till the 17th century. Sir Thomas Malory's works are noted as being the most popular, and in his works, Lancelot dies and so does Guineviere when they both run away.

There are many variations of the King Arthur legend, as you said. Like most legends, I believe that it has some basis in fact, with a lot of embellishments. Which version is "true", I really can't say. I'm most familiar with the following story:
Sir Lancelot & Guinevere end their affair, Guinevere enters a convent & Lancelot joins forces with Arthur's illegitimate son & mortal enemy, Mordred. When Mordred's army attacks Camelot, he has a change of heart & re-joins King Arthur. In the battle that ensues, Sir Lancelot is killed. Arthur & Mordred are also mortally wounded.

To many versions, and Lancelot was not in the original stories. So to this day, the development of his story is a source of disagreement between scholars. In one he becomes A hermit or monk, In other versions he is killed. But there is no true one version as I wrote before he did not belong in the original stories about King Arthur.

Lancelot goes off and marries Iblis, and they live a long life, with children & grandchildren, and die the same day.
But I must tell you there are many versions floating out there of Lancelot.

I believe he became a monk or a hermit. It depends on which versions of the legends you believe.
