I do sometimes. Because my boyfriend doesn't love it too much.
But I use textured soy (is it right?). I just rehydrate it, and then boil it in some kind of sauce (made with Mexican dried peppers, boiled in water and mixed). Then I make tacos.
I have tried soy "seviche", goes like this: you rehydrate textured soy, dice onion, cilantro, red tomato, salt perhaps cucumbers and squeeze some lemon, add salt. and you can eat it in dried tortillas, or with crackers.
Meatballs, Other way is rehydrate soy, you mix it with more meat, diced onion, parsley, tomato, raw rice, fresh mint ("yerbabuena"), salt. But to cook them you need to place them in hot water, you also have to add diced veggies (carrot, chayote, zucchini...) and potatoes.
Other way to eat soy, is drinking soy juices. They come in different flavors.
Eating soy products, you're getting protein without bad fat. Plus some good fatty acids.
