I'm not sure if anyone has the answer to that question! Einstein famously failed to find the link between the orderly macroscopic things and the disorderly subatomic things. That doesn't mean there is no link - common sense would say there has to be - but as far as I know, no-one's found one yet!
I suppose the answer may have something to do with chaos. You can see what look like patterns in chaotic things such as waves on a beach, but these patterns can break down entirely after only small changes, so maybe they weren't really orderly after all, they just looked that way...

ENTROPY - this is the physical term for disorder/order and it's actually measurable. And in the universe, everything if left long enough tends to disorder. This is because something which is messy harnesses less energy than something which is highly structured.
You say that macroscopically everything looks orderly. Well, it only looks like everything is ordered. Actually, everything is in the irrevocable process of becoming more and more disordered, it's just that every second in which you view the world is like a snap-shot. If you were to sit continuously and watch something for long enough, it would only get more messed up. A spider's web will only every degrade. It will never spontaneously re-create itself (unless the spider fancies a bit if home improvement!)
The only reason everything looks so orderly is because we are in a constant battle to keep it so. The universe would really rather things got messier and messier until it is just a big, homogeneous soup.
But we won't be around to see that :-)

As far as quantum physics is concerned yes probabilities, as meassurement is dificult as it changes the thing you want to meassure. But Probailities' other-half Statistics has a nice way of smoothing out all the abnormalities of reality and giving an overview as normal.
Anouther perspective idea is that quantum physics only makes sence dynamically, where as the macroscopic can be comprehended statically.
The best way I can sum it, paradoxically is:
REALITY IS ORDERED CHAOS!

We are in the FACT and theory things again.
We create theories to describe the facts that we see.
We can see macro scale and so we can put theories to why they happen such as gravity.
On micro scales however, we can not see, and so theorists have to come up with something, without seeing. (OK there those colliders etc) The probability is there because you can EITHER know a microscopic somethings energy/velocity, or know its location. You can not know both because we do not have th etools to detect this. YET.
Can you invent it.

Probability is strange. If you flip a coin, I cannot tell you if it will be heads or tails. But I can tell you that if you flip a coin a billion times that half a billion of those will be tails. And even if you flip a coin 10 times and get tails all 10 times, the chances of another flip being a tail is not vanishingly small, it is still 50-50.

Look at a painting from a distance and you see the whole picture........Now walk closer to the same painting and the closer you look the less sense it will make!

I see it as systems are built on top of systems. The more sucessful a system is the more it can be built off of.
