Let them create a CD cover or T-Shirt for their favourite band or singer.

they can do pottery but thats kinda expensive but its fun and i enjoyed it as a high school class (some ppl in there were artistically CHALLENGED) but its really fun and everyone could do it. u really cant go wrong because each piece of pottery is unique (sometimes crappy) and no matter how bad it looks u can always say its modern art or meant to be that way
u should be an expert at pottery if u intend to use this kind of art project because the teacher has to teach about clay and how to mold it and attach it and use a kiln to fire it
a project in pottery that u could use is pinched pots, coil pots, slab boxes, and the pottery wheel (that is really hard and i dont recommend that for beginners)
this is an expensive project that requires a lot of work but if ur up to it, pottery can be very rewarding

These are the first ones that come to mind:
Make a pinhole camera. Needs materials but they are very cheap to come by. It's the first kind of camera ever used and the photos you get are very cool and lo-tech. Here are instructions I found:

Enlarge any image, maybe in pencil, and then the students can recolor it or change it in any way. This is an easy method to copy an existing image so it looks like a new drawing. Instructions:

If you are at an Art Center with students to teach, then teach them art! Teach them the principles of art and the basics of composition. Talk about line, shape, form, value, highlights, shadows, center of interest, balance, contrast. If you don't know what these are, look them up! They are something ALL art teachers should know!

Anyone can paint or draw, just don't look for Rembrandt. Splattering some paint with toothbrushes, combs, paintbrushes, etc is fun in a messy way. Abstract art is perfect for the artistically challenged.
