Sure. This is how it can happen.
Fermentation is the conversion of sugars to alcohol, ethanol.
With mild oxidation the ethanol is converted to acetaldehyde and with further oxidation it is converted to Acetic acid. (This is also the way your body detoxifies the alcohol you drink and the acetaldehyde is the chemical responsible for the bad breath that most people have when they have too much to drink.)
The formation of Acetic acid will lower the pH to around 4 for the juice, and you will have grape vinegar. A lot of kitchen vinegar is made from fermented apples but the process and the Acetic acid is identical.
