Meat is clearly one vital ingredient of a "perfect" burger. I get it fresh-ground from the grocery butcher - usually 1/3 chuck roast, extra fat trimmed off, 1/3 lean prime sirloin, 1/3 rib eye.

Then making the patty - oh people have their ways! I don';t like to mash the hamburger TOO muc, it turns into a sort of mush of meat. But it has to stick together and have a nice shape. For every pound of meat, I add two tablespoonsful of soy sauce, a tablespoonful of "seasoning salt," two tablespoonsful of FRESH coarse-ground black pepper, a liberal sprinking of onion powder, and a very light dusting across the meat of oregano (not TOO much!). Sometime for fun I add a tiny bit of powdered mustard and one of my friends can't make hers without some dill in it.

Mix throughly but don't make the meat mushy.

Form into patties about 3/4 to 1 inch thick. They should be pretty wide around.

If you can't barbecue them, cook on an indoor electric GRILL, or put on a backing rack over a foil-lined roasting pan and cook in the oven at 350 degrees, turning often. If you are one of those people who likes iit VERY rare or mostly pink in the middle, if you use the oven, FIRST heat it to 450-500 degrees, then turn the heat down when you put the burgers in - you'll get a nicely-cooked outside and not so well done in the middle. Cooking in a frying pan just RUINS a good hamburger.

I don't care that much for barbecue sauce, but find that the BEST way is to baste the burger lightly the last couple of times it is turned while cooking. So far everyone I do this for prefers KC Masterpiece.

Everyone likes their own style of bread for the buns. I prefer either fresh French rolls or Kaiser rolls, sliced and toasted. The cheese usually is melted ONTO the burger during final cooking.

Then - everyone has their choice from the condiments tray - fresh real mayonnaise, sharp brown mustard, ketchup, additional slices of cheese, fresh crisp lettuce, thin-sliced homegrown tomato, thin-sliced Bermuda onion, dill pickle chips, and sweet pickle relish.

Me? I eat MINE plain, just very well-done burger on the toasted bun, LOTS of extra pepper!

A tablespoon of soy sauce or tamari sauce, a bit of onion, & a bit of green onions mixed into a pound of ground beef or pork. For more saltiness add a bit of salt. If you want to add some sweetness to it, chop up a few currants or raisins (just a few). It should be topped with tomato slices, a slice or two of cucumber, pickle, chopped peppers, lettuce, a bit of mayo, hot sauce and grey poupon mustard. I am soooo hungry right now just thinking about it.

hmm.... first i'd mix the burger up before grilled it- i'd mix it with some minced onion, spicy pepper, garlic and onion salt and oregeno. Then I'd grill the burger till it was medium. Add ketchup, on a slightly toasted bun, pepperjack cheese,and american cheese, 1 large tomato slice, lettuce, and 2 strips of bacon. yumm!!!

The best one i ever had was one i made by mixing ranch dressing powder into the beef then grilling it. Nice bun little lettuce,bacon,americna cheese,spicy mustard,miracle whip.
