The short answer is that they don't. As indicated
by another answerer the scene in the Disney movie
was faked, as were other scenes in Disney's
nature movie series.
What happens is that at irregular intervals the local
lemming population builds up to such a level that
a number of the animals begin migrating to find
a less crowded area. During these migrations they
may swim streams, etc. They certainly do not
deliberately do anything that is sure to kill them.
