Most people would say and Anthropologist, or Paleontologist, but I guess it depends on what type bone you're looking for! Is there a specific or special kind of bone you are interested in? Are you an Archaeologist? Are you a bone hunter?
Anthropologists studies human bones. Paleontologist studies bones of animals, usually dinosaur bones, but usually an Archeologists goes out and digs and finds the bones for them to study.
Archeology is considered in North America to be one of the four sub-fields of anthropology.

It depends what kind of bones!! They could be an archaeologist (though primarily that is more 'artifact' than bone oriented...), a paleozoologist, a paleontologist, a primatologist, a forensic pathologist, a forensic anthropologist, and so on.
