Of the ones I've seen:
The Corpse Bride - cute, but ultimately just a voiceover, and not him acting...
The Libertine - didn't like it. I know some that did, but they are fooling themselves.
Once Upon a time in Mexico - If you like him because he is cute, try this one
From Hell - pretty good, but rated R if you are thirteen...
Blow - same as From Hell
Chocolat - this one was made for chicks...
The Astronaut’s Wife - Not my favorite, by any means
The ninth Gate - this one is okay
Fear & Loathing in Las Vegas - probably his most memorable acting performance after Donnie Brasco, and easily his most memorable character, and that's including "Sparrow" in "Pirates".

Really depends on what you like... of those I've seen...
Recommended if you like Jack Sparrow and that kind of acting...
- Fear & Loathing - a definite must, especially if you like him being crazy, stumbling around, 'on drugs/alcohol'...
- Ed Wood - A must... it's a good movie and has some funny moments. Plus you get to see him in an angora sweater, skirt and heels!
Other recommendations
The Corpse Bride - regular Tim Burton stuff, amusing at times, but because it's animated you won't get to see Johnny.
The Libertine is good, but is a serious and sometimes depressing costume drama. Johnny is very good in it and sometimes he's not at all nice too look at...
Donnie Brasco - again good, but depends on whether you like gangster/crime stuff. He plays a undercover government agent working with Al Pacino's mob man.
Don Juan de Marco - sure, if you want a laugh, it's a pretty cheesy movie.
They also say that Blow and Chocolat are worth watching. But I wouldn't go for Nick of Time (I think I watched it and to be honest, it could have been a role that could have been filled by any guy. Johnny didn't make it any more special).

Definitely Ed Wood, Don Juan DeMarco, and Chocolat. The Ninth Gate is underrated as well. As far as Once Upon a Time in Mexico is concerned, the movie is a mess, but Depp is FANTASTIC in it. They could have and should have made a movie just about his character. Blow and Donnie Brasco are cool too.

Have you seen Sleepy Hollow? That's a good one.
Fear and Loathing in Las Vegas is great. He was great in this movie..Do not watch if you are only interested in his looks in this one, you will be disappointed. Acting...he's hysterical.
Benny and Joon was good

The LIBERTINE! The acting is amazing, though it's a dark movie. A lot of sex and alcohol, some good humor if you can handle dark, sexual humor.

You forgot one....Edward Scissorhands. I loved that movie. On your list though, go with Don Juan DeMarco.
