Three: Grendel, his mother and the dragon that kills Beowulf in the end. Of course, there is discussion as to whether Grendel's mother should be termed a monster or not, as she is fighting for Beowulf's blood guilt for killing her son, so in effect she is justified in her attack, as per the customs of the time.

It depends on which characters you consider to be "monsters".
(Haha I should be an expert on this; I took a university English class on "Monsters of Literature")
Grendel is the most prominent monster in Beowulf
Then, there is Grendel's mother
Later, Beowulf encounters a dragon
But frankly, Beowulf himself kind of scares me.
