Harvest before they get hard. A friend gave me some red okra and I picked it when it was about 3.5-4 inches long.

Harvest when its a decent size, & still soft.
Okra casserole
Makes 6 to 8 servings
1 ½ pounds small fresh okra, trimmed and cut crosswise into ¼-inch slices
3 medium-size ripe tomatoes, chopped
1 large yellow onion, chopped
1 medium-size green bell pepper, seeded and chopped
Salt, cayenne and hot sauce, to taste
6 bacon slices
Preheat the oven to 350 degrees. Lightly grease a 2 ½-quart casserole. Make layers of okra, tomatoes, onion and bell pepper in the casserole. Season with salt, cayenne and hot sauce. Arrange the bacon slices over the top of the mixture and bake for 1 ½ hours. Serve warm.

Pick it when young & still relatively short.
If you wait too long it becames hard, stringy & seedy.

when it's still tender. Because if you leave it on there too long then it gets hard and not edible.
