When you're making gumbo, and you've been cooking the roux down to a nice milk chocolate brown... You have the trinity (onions, bell peppers and celery) all chopped and waiting. The instant you toss the trinity into the roux is the most awesome smell!
Otherwise, bread or rolls baking...
