In terms of lyrics and breakthroughs to new phases in his songwriting skills (IMO): Hard Rain's A Gonna Fall; Mr. Tambourine Man; Desolation Row; Love Minus Zero/No Limit; Visions of Johanna; Tangled Up in Blue; Isis; Every Grain of Sand; Jokerman; Brownsville Girl; Not Dark Yet.
I'll pick Visions of Johanna (good live versions, last year), followed by Tangled Up and LARS, as above

I really like "Boots of Spanish Leather" and "To Make You Feel My Love" but I prefer the recordings that were done by other artists (Dervish and Garth Brooks respectively). I like Dylan's poetry and tunes, but I don't care much for his voice.
