Depending on the nature of your question, it can have a couple different meanings. Working on your "core strength" means doing sit-ups, crunches, leg lifts, windmills, etc to make your back & midsection stronger. A strong core keeps your body aligned properly when doing multiple activities, and helps prevent fatigue.
For example, a lot of people that are into bicycling have back pain after a long ride. But doing abdominal exercises will help keep your back from doing all the work, and the back pain will go away.
The other "core" referred to in sports is basically your torso, i.e. "maintaining proper core temperature." Something to pay attention to during winter activities or backpacking, if you keep your core temperature reasonable you can play in much hotter or colder temperatures than you normally would be comfortable in. Dressing in layers is one of the best ways to do this.
