in regards to the term "race", i think of the human race (people). when referring to the term "ethnicity", i think of the ethnic backgrounds that make up someone's ancestral lineage. similar to the word "descent" - referring to ancestors and descendants (origin).
i believe these concepts are important to the US society because of the mass diversity of ethnic backgrounds it comprises of. sure, we (those who live in the US) say we are american (our nationality) because we live in this "nation". when you narrow in on the various cultures and different bloodlines of each american, everyone wants to be proud of what they are - ethnicity.
some people say they are just american (even if they are of mixed ancestry) because they were born and raised here. on the other hand, some who may have migrated here from another country may say they are american in addition to their lineage (ethnicity).
basically, i think we use the term ethnicity to involuntarily share a reminder to ourselves and others of "who we are" and "where we came from".

Race, to me, is a classification of individuals according to visible traits, like skin color, eye color, height, etc. Ethnicity, on the other hand, refers to individuals who share a common culture, ancestry and background. Ethnic groups can share racial characteristics, but that isn't always the case. If you think about Hispanics, for example, some people oversimplify and say that Hispanics are all Mexicans, and as such, they all share the same visible traits as Mexicans. However, Orlando Hernandez, the pitcher for the NY Mets, is Cuban and also black.
These concepts are important in every society, because societies have power structures that are largely based upon the ideas of race and ethnicity, and that are preserved though the propagation and constant repetition of stereotypes.
In the case of the US, it is only fairly recently that the country began legislating to end the discrimination based on race, and currently, a combination of race/ethnicity and stereotyping is at the bottom of many arguments sorrounding immigration.
For ethnic and racial groups, these concepts play a huge role because it is a safe haven. If you feel you are constantly under siege because of the way you look or the language you speak, you will retreat to the community of your peers. It's a normal response, and everyone does it, including Americans who live abroad.
