Let's say that you don't have access to the FTP specification or google and would like to know if FTP encrypts the user name and password. How could you find out?

FTP, by itself, doesn't encrypt username, password, or the data stream. If you're looking to encrypt things, your options are to either: 1) Secure the entire transmission (ie, VPN, etc.), 2) Use something like SFTP (secure ftp), 3) Encrypt the files before FTPing (though that doesn't encrypt username or password)
